Bacon Mushroom Chicken

Description: A very tasty Chicken Carbonara meal! Serve over rice or pasta.

1 tablespoon olive oil   2 chicken breast halves
salt   pepper
1 clove of garlic, crushed   4 slices of bacon
1/2 cup mushrooms   1 teaspoon rice flour
2 teaspoons water  

  1. Preheat oven to 350 degrees.
  2. Pour olive oil into a 9x13 inch baking dish. Add chicken, skin side down; sprinkle with salt, pepper, and garlic. Turn chicken over, season again, and lay bacon strips on top. Sprinkle with mushrooms.
  3. Bake in preheated oven for 45 minutes (if uncovered) to 60 minutes (if covered), or until chicken is no longer pink and juices run clear.
  4. Remove chicken, bacon and mushrooms to a platter and keep warm. Pour juices from baking dish into a small saucepan and whisk together with flour and water over low heat until thickened. Pour sauce over chicken and serve warm.
